French Crepe
Nov 21st, 2007 by daphne

What you need:
3 large eggs
1 1/4 cup of flour
1 1/2 cup of milk
dash of salt
2 to 3 tablespoons of melted butter or margarine
How you make:
Begin by measuring the flour and placing it in a bowl. Add the salt. Set aside.
Next, pour the milk and set it aside. Now crack the eggs and whisk them thoroughly. Pour the eggs and the milk into the blender and put the lid on the blender tightly. Use the mix setting for about one minute
While the blender is still running, carefully remove the lid and add the flour mixture one spoon at a time
Turn off the blender, and measure the butter or margarine into a small bowl. Cover and melt. So I crumble up the wax paper because it fits over the bowl a lot easier that way. So you move it over to the bowl, and kind of wrap it around it. When you crumble the wax paper, it always helps to hold the wax paper onto the bowl, and then you can put it into the microwave and it won’t splatter all over the inside of the microwave.
Cook the margarine for about thirty seconds on high. Then, with the lid on, re-start the blender, carefully remove the lid, and pour the melted butter or margarine into the mixture, mixing for about a minute.
On the stove, turn a burner to medium low heat. I prefer a cast iron skillet because it distributes the heat evenly. When it’s hot, rub a little margarine on the surface.
Now, carefully pour about 1/4 cup of the mix onto the skillet, making sure that it spreads thinly and evenly. Rotating the skillet from side to side will help even out the batter. Bubbles will begin to form as it cooks. And, when the edges brown slightly, it’s time to flip the crepe. Do so using a spatula.
The heat may need to be adjusted if the crepe browns too quickly. When done, place the completed crepe on a plate and repeat the process. Each crepe takes three to four minutes to cook, that’s about two minutes per side.

Maple syrup and butter - my favorite combi!
How many servings:
